Good Reason For Coming Home

  • Ingredients:
    • 2 cups long-grain rice
    • 4 chicken thighs or breasts
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 3 cups chicken broth
    • 1 cup peas and carrots
    • 1 tsp thyme
    • Salt and pepper to taste
  • Instructions:
    1. Sear chicken in a pan until golden brown, then remove.
    2. Sauté onions and garlic in the same pan until fragrant.
    3. Add rice, chicken broth, thyme, salt, and pepper. Bring to a boil.
    4. Return chicken to the pan, cover, and simmer for 20 minutes.
    5. Stir in peas and carrots, cook an additional 5 minutes. Serve warm and enjoy.
