- Ingredients:
- 2 cups long-grain rice
- 4 chicken thighs or breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup peas and carrots
- 1 tsp thyme

- Instructions:
- Sear chicken in a pan until golden brown, then remove.
- Sauté onions and garlic in the same pan until fragrant.
- Add rice, chicken broth, thyme, salt, and pepper. Bring to a boil.
- Return chicken to the pan, cover, and simmer for 20 minutes.
- Stir in peas and carrots, cook an additional 5 minutes. Serve warm and enjoy.
