Ingredients for the Pasta

Long pasta shapes hold creamy sauces best and give the dish its signature look.

  • 400 g (14 oz) fettuccine or linguine
  • Salted water for boiling
  • ½ cup reserved pasta water
  • Fresh parsley for garnish

Step-by-Step Cooking Instructions

Step 1: Preparing the Chicken

Start by patting the chicken dry using paper towels. Removing excess moisture is essential to achieve a deep golden crust. Season both sides evenly with salt, black pepper, paprika, and garlic powder.

Step 2: Searing the Chicken

Heat olive oil and butter in a large skillet over medium-high heat. Once hot, add the chicken in a single layer. Sear for 5 to 6 minutes per side until deeply golden and cooked through. Remove the chicken from the pan and set aside.

Step 3: Cooking the Pasta

Bring a large pot of generously salted water to a boil. Cook the pasta until al dente according to package instructions. Before draining, reserve half a cup of pasta water.

Step 4: Making the Garlic Butter Base

Lower the heat to medium. In the same skillet, melt butter and add the minced garlic. Cook for 30 to 40 seconds until fragrant, being careful not to brown it.

Step 5: Building the Cream Sauce

Slowly pour in the heavy cream while stirring. Scrape up the browned bits from the bottom of the pan, as they add depth of flavor. Let the sauce simmer gently until slightly thickened.

Step 6: Adding Parmesan Cheese

Reduce heat to low and gradually stir in the grated parmesan cheese. Continue stirring until the sauce becomes smooth and creamy. Season with salt, black pepper, and red pepper flakes if desired.

Step 7: Combining Pasta and Sauce

Add the cooked pasta to the skillet along with some reserved pasta water. Toss gently until the pasta is fully coated and the sauce becomes glossy and silky.

Step 8: Returning the Chicken

Place the chicken back into the skillet. Spoon the sauce over the chicken and allow it to simmer for a few minutes so the flavors can blend.

Step 9: Garnishing and Serving

Finish the dish with freshly chopped parsley and extra parmesan cheese. Serve immediately while hot.
