Instructions

Preheat & Prep: Preheat your oven to 375°F (190°C). Lightly grease a small baking dish or oven-safe skillet.

Slice the Apples: Place an apple on a cutting board with two chopsticks or wooden spoons parallel on either side (this prevents cutting all the way through). Make thin, vertical slices about ⅛-inch apart along the apple, stopping at the chopsticks to keep the bottom intact. Repeat with remaining apples.

Season & Stuff: Place the apples in the prepared baking dish. Drizzle with olive oil and season lightly with salt and pepper. Gently fan the slices open and stuff the slits alternately with pieces of Brie cheese and chopped charcuterie.

Top & Drizzle: Sprinkle the chopped walnuts and fresh thyme over the apples. Finish by drizzling honey evenly over the top.

Bake: Bake for 25–30 minutes, or until the apples are tender when pierced with a knife, the cheese is melted, and the tops are lightly golden.

Serve: Let cool for 5 minutes. Garnish with additional fresh thyme. Serve warm directly from the baking dish.

Chef’s Tips

Apple Choice: Granny Smith apples offer a tart contrast, while Honeycrisp provide a sweeter, juicier result.

Make Ahead: You can slice and stuff the apples up to an hour ahead; refrigerate until ready to bake.

Serving: Enjoy as a luxurious appetizer with crusty bread or crackers to scoop up the melted cheese and softened apple.
