- Prepare the Beef:
Season the beef tenderloin with salt and pepper. Heat olive oil in a skillet over high heat and sear the beef on all sides until browned. Remove from heat, let cool slightly, and brush with Dijon mustard. - Make the Mushroom Duxelles:
In the same skillet, melt butter and sauté mushrooms and garlic until the mixture is soft and moisture has evaporated. Let it cool. - Wrap the Beef:

Preheat oven to 425°F (220°C). Place the wrapped beef on a baking sheet and bake for 25–35 minutes, or until the pastry is golden and an instant-read thermometer inserted into the beef reads 125–130°F (52–54°C) for medium-rare. Let rest 10 minutes before slicing. - Serve:
